I use old-fashioned about roasting.I roast on a old style of a vintage roaster- on that was made to hold consistent heat by the thichk caldrom and let air flow through in simple way controled.I have spent 30 years perfecting the art of using senses,experience and knowledge to make adjustments and cool it.
